Prep and cook food for allergy sufferers (theory only)

Aims of the course

Be able to prepare and cook food to meet the requirements of allergy suffers

  • Ensure the preparation and cooking areas and equipment are safe, hygienic, ready for use and free from contaminants
  • Prioritise work and carry it out in an efficient and safe manner
  • Obtain and follow clear and accurate information relating to the particular allergenic
  • Ensure all ingredients are of the type, quality and quantity required, and all relevant information provided on labelling is referred to
  • Follow procedures to ensure that, during preparation and cooking, there is no contamination from anything which can cause an allergic reaction
  • Finish dish to quality requirements and present to organisational standards
  • Store and label any dishes not for immediate use, in line with requirements for allergen control and general safety
  • Clean preparation and cooking areas and equipment to organisational and legal standards after use, ensuring equipment and work areas set aside for the preparation of meals for allergy sufferers are not compromised
  • Report problems or concerns to the appropriate person
  • Return cleaned equipment materials and personal protective equipment to areas segregated for allergens

Understand how to prepare and cook food to meet the requirements of allergy sufferers

  • State the main food allergens and those which occur most commonly
  • State what food preparation and cooking methods can affect the allergenic content of foods
  • Describe the impact which anaphylaxis has upon the lifestyle of people
  • Describe the impact that eating particular food stuffs can have upon people who are allergic to them
  • Describe how the risk of allergic reaction can be minimised
  • State the methods used to prepare and cook food which prevent contamination
  • Describe how to effectively communicate information regarding allergens to colleagues

Ongoing assessment with evidence of achieving the aims of the course.
