Introduction to Professional Cookery Studies

The VTCT Level 1 Diploma in Introduction to Professional Cookery Studies has been designed to give you an introduction to the hospitality industry.

You will learn new practical skills in our industrial kitchens along with preparing, cooking and serving food within our on-site college restaurant. This enables you to undertake hospitality roles in a realistic working environment on a weekly basis.

This course will help you to develop your skills and knowledge to progress into or within employment and / or continue your studies within our vocational area.

As part of this course, you will have approximately 12 hours a week classroom study, with a further 6 hours a week self study in order to successfully pass the course.

The 6 mandatory units will give you the opportunity to develop your knowledge and understanding of food safety and health and safety awareness in the hospitality industry. You will learn how to prepare and cook food by boiling, stewing, braising, baking, roasting, grilling, and frying.

The optional units give you the opportunity to develop your knowledge and understanding in a range of sectors within the hospitality and catering industry including healthier diets and how to use kitchen equipment. In total you will complete 7 units throughout the year.

You will also complete:

  • CIEH Level 2 Award in Food Safety in Catering
  • An Essential Skills qualification at Level 1 Communications or Number along with Employability Skills

Assessment includes:

  • Observed work
  • Witness statements
  • Audio-visual media
  • Evidence of prior learning or attainment
  • Written questions
  • Oral questions
  • Assignments
  • Case studies

Assessments also take place in a realistic working environment, maximising full use of work experience activities.

  • There are no formal pre-requisite qualifications that you must have prior to undertaking this qualification
  • We will ensure that you have the required knowledge, understanding and skills to enrol and successfully achieve this qualification

On successful completion of this qualification, you may consider progressing onto a Level 2 related vocational subject.

Alternatively, you may seek employment in a variety of sectors within the hospitality industry.
